Across his 10-plus years of culinary artistry on Sanibel Island, Chef Patrick Fitz has created quite a following with his delightful creations at Sundial Resort, the Sanctuary Golf Club and, for the past five years, Blue Coyote. Today, Sanibel Captiva Beach Resorts is proud to announce that Fitz will serve as Executive Chef at West Wind Inn’s legendary Normandie Seaside Cafe.
Known for his unique takes on Mediterranean and European recipes that lean toward French and Italian influences, Chef Fitz is excited at the opportunity to make Normandie a must-do dining destination for both guest and residents — much as he has in his past endeavors. Beyond a standard menu, he plans “at least one” chef’s inspiration special nightly and the recreation of at least one island favorite, Clay Pot Grouper (if you’ve had it before, now you know where you can get it again!).
Named “Best Chef on the Islands,” Chef Fitz is a true food aficionado, having started his career in the industry “at the age of 17, washing dishes. I’ve been in the business ever since, and I’m passionate about what I do. But my great reward is seeing the reaction of our guests when they take that first bite. It makes all the work worthwhile.”
